Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make ukadiche modak. There are many requests for this recipe. I have already posted ukadiche modak recipe last year. Still there are many requests for colorful modak. Let’s see how to make tricolor modak today. 15th August special recipe. Take 1 cup water in a pan. Add 2 tsp milk. Milk gives nice binding to modak and also ti gives nice colour. Add salt to taste and 1/2 tsp ghee. Boil it really good. Water is nicely boiling. Turn off the gas now. Add 1 cup rice flour. Which rice flour should be used? This is a most asked question. I mostly grind ambemohar rice in mill. You also can use basamati tukda or basmati kani. Cover and keep it aside for about 10 minutes. Until ukad cools down, let’s make stuffing for modak. Roast 1 tsp poppy seeds in a pan until it turns light golden. Poppy seeds have changed the colour and nice aroma. Add 1 cup fresh shredded coconut and fry for a minute to reduce it’s raw smell. For 1 cup rice flour use 1 cup fresh coconut. For 1 cup coconut use 1/2 cup gudh and 1 tbsp dry fruits. Add dry fruits is optional. You can skip it if you don’t like. Mix well. After 2-3 minutes the gudh melts. Fry this mixture for 3-4 minutes until it dries up a little. After cooking for about 5 minutes, the mixture is almost dry. Turn off the gas and add 1/4 tsp cardamom powder. Mix well and let the mixture cool down. I has covered and rested the ukad for 10 minutes. Take it out into a dish. Knead ukad really good for about 7-8 minutes. If you feel it dry, you can use a little oil or hot water for kneading. This is dough for ukadiche modak. I have kneaded it really good for about 5-6 minutes. Divide it into 3 portions. Like so. We are making tricolour modak. We will keep one white, add green colour in one portion and orange colour in other portion. Add a little colour and knead it again. Green colour dough is already. Keep it aside. Take another portion. Keep ready dough covered aside. Add orange colour now. Use store bought dry food colour and add water to make liquid. So that it will be evenly mixed. Orange colour dough is already. Take white, green and orange all 3 coloured balls. Make small balls of equal size. I have made white, orange and green coloured 11 balls each. We can make 11 medium size modak from 1 cup rice flour. Take white, orange and green colour ball each. Keep remaining covered aside. Keep it covered continuously. Press the three balls together. Like so. Make it one pari of 3 together. It should be properly sealed. It should not be lose anywhere. Let’s make modak now. Press the edge carefully a little. We are basically making pari. That pari should be even. 3 colours are looking nice. While making pari or modak, If you feel that dough is sticking to your hand, then do not use oil or ghee at all. modak doesn’t get folded nicely. At such times, use dry rice or corn flour to hands. But do not use oil at all. Modakachi pari is already. Let’s make plates. Wow.. Let’s fill stuffing and let’s close the modak. Like so. If you find it difficult to roll modak with hand, let’s see how to roll modal with rolling pin. Take 3 balls of dough and make pari. After making nice ball, roll it evenly with rolling pin like puri. After rolling, make plates. Fill up stuffing now. Close now. Let me make all modak in the same way. Tri colour modak have been stuffed and ready for steaming. I have this steamer. Apply a little oil at it’s base so that modak won’t stick to it. You also can use banana leaf or clean cloth. After spreading oil, trensfer the modak into it. Exactly 11 modak are already from 1 cup rice flour. I have heated 1″ water in the steamer. Put modak on it. Steam on medium heat for 15 minutes. Do not steam on high heat or modak will break and stuffing will come out. Steam on medium heat for 15 minutes. I have steamed modak on medium heat for exactly 15 minutes. Let’s see how they have become. Take out into a dish. Colourful ukadiche modak are looking awesome. Serve hot with lots of ghee. My kids just love ukadiche modak. He is not at home.
